If we were on Family Feud and were asked what muffins are most commonly eaten for breakfast our buzz-in would be “blueberry.” There’s just something about waking up in the morning and enjoying a blueberry muffin. Make these muffins ahead and pair with yogurt for a perfect quick breakfast. (*Note: these muffins are packed with blueberries!)

Ingredients
- ½ cup Coach’s Oats®
- 1 ½ cups whole wheat flour
- 1 cup sugar
- 3 Tbsp. apple sauce
- ¼ tsp. salt
- 2 ½ tsp. baking powder
- 1 tsp vanilla
- 1 egg
- 1 cup fat-free milk
- 2 cups fresh or frozen blueberries
Instructions
- Preheat oven to 350°.
- In a large bowl combine egg, milk and applesauce.
- In a separate bowl, mix together oats, flour, sugar, salt and baking powder. Once combined add flour mixture to the liquids until mixed well. Fold in blueberries.
- Pour batter into 12 lightly greased muffin tins. Bake for 45 minutes or until a toothpick inserted in center comes out clean.

Also, online there are a bunch of calorie calculators. I used one to roughly get this recipe and it's about 167 calories, 1.05g fat, 167g sodium, 20.5g sugar, and 3.2g fiber. Thanks for stopping by.
