Breakfast for dinner or dinner for breakfast, whatever you call it there’s always time for oatmeal. Taking a twist on the more traditional sweet toppings and flavors, we love to experiment with savory oatmeal at Coach’s Oats. One added benefit of eating savory oatmeal for breakfast is, the chance to sneak more veggies into your day.

Let’s start with the main inspiration behind the dish: Greek yogurt. Unlike regular yogurt, Greek yogurt is strained; removing excess liquids allows for the famous thick and creamy texture, and it remains a protein powerhouse. In addition Greek yogurt has fewer carbohydrates and less sugar than regular yogurt which can make for easier digestion. Combine the yogurt with oats and fresh veggies and you have one healthy lineup!
This recipe is refreshing and cool, perfect for hot summer days or nights. Prepare the recipe as directed or let the oats, spices and yogurt soak overnight for a savory overnight oatmeal too.
Oat-Pa!
Ingredients
- ¼ cup Coach’s Oats
- ¾ cup water
- 1 tsp oregano
- ½ tsp garlic powder
- salt/pepper to taste
- 1 single serve plain Greek yogurt (we used Chobani 0% 5.3 oz)
- Toppings:
- tomato
- cucumber
- crumbled goat cheese or feta cheese
- additional topping ideas:
- black olives
- red onion
- chopped spinach
Instructions
- Regular: Prepare oats with water and spices as directed (microwave or stove top). Stir yogurt into prepared oats. Top with tomato, cucumber and cheese. Enjoy!
- Overnight: Combine oats, spices and yogurt in a bowl. Cover and refrigerate overnight. In the morning, stir and top with tomato, cucumber and cheese. Enjoy!
