
If you follow us on Facebook, you saw this delicious recipe–in-the-making the yesterday. We had many comments from people thinking it was a berry or fruity flavor. The vibrant color is credited to McCormick, but all the guesses have given us ideas for the future!
We have a team member at Coach’s Oats who is a big fan of red velvet cake, so, naturally I thought we needed a recipe to oatmeal-ize the flavor.
Red Velvet Baked Oatmeal
- 1 ¾ cups Coach’s Oats®
- 2 ½ cups low fat buttermilk
- 1 egg
- 1 tsp. vanilla
- ½ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- ½ tsp. cinnamon
- 1 ½ Tbsp. of dark cocoa powder
- ⅓ cup raw sugar
- 1 Tbsp. brown sugar
- 1 Tbsp. red food coloring
- LaughingCow® Smooth Sensations™ Strawberries & Cream (optional frosting)
Preheat oven to 350°.
Combine oats and buttermilk in a large bowl and let soak for 10 minutes. In a separate bowl whisk together baking powder, baking soda, salt, cinnamon, cocoa and sugars.
Add egg, vanilla and food coloring into oats and mix well. Combine dry ingredients with oats and stir until all combined. Pour oats into a greased 8×8 baking dish and cover with foil. Bake for 30 minutes. Remove foil and bake oatmeal for another 10 minutes or until oatmeal is firm to the touch.
Allow to cool. Cut and top with frosting of your choice. Enjoy!
