
I’m sure you have heard, but across the pond this week there is going to be a royal wedding and it’s apparently a big deal. It’s a fairy tale type of romance. A “commoner” marrying a prince. A day sure to be filled with glamour, gowns, gems and things only a girl can dream of.
So, what better way to start your day than with a fairy tale breakfast? We’re cooking up Princess Porridge topped with Blueberry Sapphire Compote (to match the ring of course) because everyone deserves a little royalty.
Also, if you plan on watching the live wedding this Friday the Princess Porridge is perfect for early risers.

Blueberry Sapphire Compote
• 2 cups blueberries
• ¼ cup pure maple syrup
• 3 Tbsp. water
• 1 ½ tsp. fresh lemon juice
• 1 tsp. cornstarch
Combine 1 cup of blueberries and remaining ingredients in a small sauce pan over medium heat, let cook for 10 minutes. Add remaining cup of blueberries and cook on low heat for 8 minutes. Serve warm.
