Ever tire from the hum-drum sweet flavors of oatmeal and crave something savory in the mornings? Like pizza!? Thank goodness, for the ever-versatile oat and its ability to be transformed into countless flavors. Not only can savory oatmeal be delicious, it can add more vegetables in your diet. Fruit never seems as tough to incorporate into the diet, but veggies can be more of an obstacle. Adding them to your morning meal will make it easier to reach your daily veggie goal.

Pizza-ified Oatmeal
In the mix:
· ⅓ cup Coach’s Oats®
· 1 cup water
· Italian Seasoning
· Crushed red pepper flakes
· Chopped mushrooms
· Chopped green bell pepper
· MorningStar Farms® sausage patties (cooked)
· Light Italian cheese blend
· Marinara or tomato sauce
Method (season to your tastes):
Cook oatmeal as directed (stove top works best for this recipe). Add Italian seasoning and oregano when you add the oats to the water.
As oats cook, sauté mushrooms, peppers and pepper flakes in a separate pan.
During the last minute of cooking the oats add your desired amount of marinara sauce and stir to heat and thicken. Pour oats into bowl, top with cheese (melts instantly on the hot oats), crumpled sausage and veggies.
Savory oatmeal nay-sayers: Don’t be scared to try this. It’s delicious! Adjust recipe to your liking with different toppings, sauces and spices. Happy Pizza Friday!
