We posted the preview picture earlier in the week and we know this recipe is in high demand, based on response. If you can brave turning on your oven in the heat, you will not be disappointed with these delicious cookies.

Ingredients
- ½ cup all natural nutty peanut butter (we use Laura Scudder’s®)
- ¾ cup butter
- 1 ¼ cup white whole wheat flour
- 1 tsp. baking powder
- ½ tsp. baking soda
- ¾ cup raw sugar
- ½ cup dark brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1 cup Coach’s Oats®
Instructions
- Preheat oven to 375°.
- Combine peanut butter and butter and mix until well combined.
- In a separate bowl, whisk together flour, baking powder and baking soda. Add half of the dry mixture to the butters and mix in sugars, eggs and vanilla until well combined. Add the remaining flour mixture and beat until combined (do not over-beat). Fold in the Coach’s Oats®.
- Scoop about 1 to 1 ½ Tbsp. of dough onto a lightly greased baking sheet and bake 10 - 12 minutes. Do not over-bake (edges of the cookies should start to turn golden brown). Keep cookies on baking sheet for 2 – 3 minutes once removed from the oven. Enjoy.
