We put a little taste of Coach’s Oats into this yummy Taste of Home recipe.
This Overnight Baked Oatmeal is the perfect way to add something special to your oatmeal. It’s easy to prepare and even easier to eat. This recipe would work great for your next brunch or a holiday breakfast. The dried fruit and add-ins can easily be customized for personalized preferences. It’s baked-oatmeal-meets-bread-pudding. You can enjoy the recipe as-is or top with fresh whipped cream, milk or a festive caramel sauce.

Ingredients
- 2 eggs, lightly beaten
- 3 cups milk (recipe used 2%)
- -could substitute with almond, 1% or your milk of choice
- ¾ cup packed brown sugar
- ¼ cup canola oil
- 1 ½ tsp. ground cinnamon
- 1 tsp. salt
- 2 cups Coach’s Oats
- ¼ cup dried blueberries
- ¼ cup dried cherries
- ¼ cup sliced almonds
Instructions
- In a large bowl, whisk together first 6 ingredients. Stir in oats and dried fruit. Transfer to a greased 8” baking dish. Refrigerate, covered, 8 hours or overnight.
- Preheat oven to 350°.
- Remove oatmeal from refrigerator while oven heats. Stir oatmeal, sprinkle with almonds. Bake uncovered until golden brown. We baked ours for 50 minutes, or until the center was firm. Serve warm.
