This Coach’s Oats® recipe features a simple, delicious, crispy white chocolate chip cookie. Enjoy as a classic cookie, or use this recipe as a base for experimenting with different ingredients. Enjoy!

Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1/4 tsp vanilla extract
- 1 Tbsp olive oil
- 1 cup Coach’s Oats®
- 1 cup flour
- 1/4 tsp baking soda
- Dash of salt
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Cream together butter and sugars.
- Add egg, vanilla extract and oil.
- Mix in Coach’s Oats®, flour, baking soda and dash of salt.
- Stir in white chocolate chips.
- Scoop cookie dough onto greased baking sheet.
- Bake for 10 to 12 minute or until golden.
- Transfer to drying racks and cool.
- Notes:
- Add chopped nuts such as walnuts, pistachios or pecans.
- Add enhancements such as chocolate chips or butterscotch chips.
- Add fruit such as raisins, dried cranberries, shredded coconut or grated orange or lemon zest.
- For additional dough flavor, add cinnamon or nutmeg.
