Happy Early Fall! Thursday officially marks the first day of autumn. Everywhere you look you’ll see pumpkins and pumpkin patches popping up. If you’re not using the bright orange squash to make pie, snacking on seeds, making decorations, baking pumpkin squares or carving a funny face, you can try making some delicious pumpkin bread.
Ingredients
- 1 cup whole wheat flour
- 1 cup unbleached white flour
- ½ cup Coach’s Oats®
- ½ tsp. salt
- 1 tsp. baking soda
- ½ tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- ½ tsp. cloves
- ½ tsp. allspice
- ½ cup butter, softened
- 1 cup pure pumpkin
- ¼ cup apple butter
- 1 cup brown sugar
- 2 eggs
- ½ cup water
- ½ cup chopped pecans
Instructions
- Preheat oven at 350°
- In a medium bowl, mix together flour, oats, salt, baking soda, baking powder, cinnamon, nutmeg, cloves and allspice.
- In a separate bowl, mix together butter, brown sugar and eggs with an electric mixer. Add in pumpkin and apple butter, mix well.
- Add the flour mixture to the butter mixture, alternating with water, and mix well. Fold in pecans.
- Grease and flour two 9x5x3 pans and pour batter in evenly. Bake for 50-60 minutes or until toothpick inserted in center of bread comes out clean. Cool bread on wire rack.

Canned pumpkin should be available all year in the baking aisle in most grocery stores. It is in my area (Phoenix).
sounds delicious! I will switch out the butter with coconut oil and cut some of the sugar… can't wait to try it!
I find it year round, too, but it's not with the canned fruits and veg. It's on the bottom shelf on the baking aisle near the pie fillings.
What can I substitute for apple butter?
Diane, I’m sure you can add applesauce, or even just additional pumpkin – but maybe just add a little extra cinnamon as well.
