I love any reason to celebrate. Any holiday, big or small, is always a chance to celebrate and to live in the moment; besides being festive, it just makes everything more fun. This week is super exciting because we have two holidays, Cinco de Mayo and Mother’s Day. Even better is this fabulous oatmeal dish that can be used to celebrate either one.
If no one in your family likes oatmeal, they will become an oatmeal fan after tasting this recipe. It’s quick (thanks mainly to Coach’s Oats) and you already have the ingredients. The simple combination of cinnamon and sugar brings all the flavors of a churro to your taste buds. In addition, with the crunchy top and delicious soft middle you’ll feel like you are eating the festival favorite with a spoon.
Ingredients
- 1 cup Coach’s Oats®
- 3 cups water
- 2 tsp. vanilla
- 2 Tbsp. sugar (or sweetener of your choice)
- 2 tsp. cinnamon
- 2 eggs (beaten)
Instructions
- Bring water to boil in medium pot. Add oats to boiling water and reduce heat to medium-low. Cook oats for about 5 minutes. In last minute of cooking, add sugar, cinnamon, vanilla and eggs. (Oatmeal will be thick like a custard)
- Spoon oats into lightly greased ramekin dishes. Sprinkle top of oats with cinnamon and sugar to coat the tops. Put ramekins in casserole dish and fill with enough water to coat the bottom. Put the oats under the broiler for about 6 minutes or until bubbling and a little darker than golden brown. Dig in! The best part is digging through the crunchy top to the soft churro-like center.
