A good ole’ fashioned oatmeal cookie. The original Coach’s Oats cookie recipe to be exact!
Ingredients
- 1 cup packed brown sugar
- 1/2 cup sugar
- 3/4 cup butter
- 2 eggs
- 2 tsp. vanilla
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1 3/4 cup all purpose flour
- 1/4 tsp. salt
- 2 tsp. ground cinnamon
- 2 cups Coach's Oats
- 1 cup raisins*
Instructions
- Preheat oven to 375.
- In a mixing bowl, cream together the sugars and butter.
- Mix in the eggs and vanilla.
- Add combined baking powder, baking soda, flour, salt and cinnamon. Mix well.
- Stir in oats and raisins*.
- Drop by rounded teaspoons onto an ungreased cookie sheet.
- Bake for 12 - 15 minutes or until edges are golden.
- Cool cookies on wire rack. Makes about 4 dozen cookies.
- *Options - Replace raisins with chocolate or butterscotch chips. May also add 1/2 cup chopped walnuts or pecans.

How can I modify this recipe for high altitude?
Beulah, I’m not exactly sure on specifics. We just googled for some basics…but maybe search your specific altitude. “Adjustment for 5000 feet:
Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
Reduce sugar: for each cup, decrease 0 to 2 tablespoons.
Increase liquid: for each cup, add 2 to 4 tablespoons.
Increase oven temperature by 25 degrees F.” Thanks for stopping by
The last Coach’s bag we had called for another type of oats to be added in addition to Coach’s oatmeal to the oatmeal cookie recipe. What happened?

I used 1/2 Coach & 1/2 old fashioned Quaker
Chill raw dough for a day
Then baked!
Raisin & nuts w a tad bit of coconut shreds r my fav

These were so good!
There I was, a teacher on a snow day, having a horrible hankering for oatmeal cookies. But I had no rolled oats! I did, however, have a bag of Coach’s Oats. Was it possible? Could there be a recipe? I found this one, and then realized that I was out of butter. I did have shortening though. So I subbed it out using some complicated mathematical calculations found on a website. Then I realized I had only half the amount of cinnamon (what is my pantry coming to!?!). I added nutmeg and cloves. I live at high altitude but didn’t make adjustments for that. I had done enough math for a day.
They were delicious. I now have a tummy ache from eating an entire dozen straight out of the oven (on the second day of a diet, no less).

Wow! This is such a delicious recipe for oatmeal cookies. I made them with golden raisins and they were a hit, but I can imagine theyโd be even better with chocolate chips and walnuts, or craisins and white chocolate. Iโll be making these again!
We add nuts and dehydrated blueberries. Yum!

Quick question in regard to the purpose flour, should flour be sifted
Hi Kevin, we have added the flour without sifting. I’m sure if sifted it wouldn’t make them any less yummy ๐
I sometimes will microwave the oats first with a bit of water to soften them. Have you tried this? May need a touch more flour if the mix is too loose from added water. Also, I love to add almond butter and again may need a bit more flour. Thanks.
