We’re back with another recipe to utilize that big batch of leftover oatmeal. The inspiration for this recipe is pretty simple: Who doesn’t love oatmeal raisin cookies? However, it’s tough to justify eating a cookie for breakfast. Enter, the Oatmeal Cinnamon Raisin Muffin!

Ingredients
1 cup spelt flour
¾ cup brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 ½ tsp. cinnamon
dash of nutmeg (optional)
½ cup melted butter
2 eggs (beaten)
1 cup cooked Coach’s Oats®
1 tsp. vanilla
1 cup golden raisins
Instructions
- Preheat oven to 350°.
- In a large bowl combine flour, sugar, baking powder, baking soda and spices.
- In a separate bowl mix together the remaining ingredients. Once combined, add flour mixture to the wet ingredients. Scoop batter into lined muffin tins and bake for 18-20 minutes or until muffins are golden brown.

Note: Why use spelt flour? Spelt is another form of wheat and known as an ancient grain. The grain actually contains more protein than regular wheat. I find that it has a slightly nuttier flavor than whole wheat flour and is simply another way to add more fiber and whole grains to a recipe.
