
Fight fatigue, boost your metabolism, prevent heart disease and weight gain all by eating oatmeal. The benefits of oatmeal are well known and it continues to prove itself as a super grain. However, the regular morning bowl of oatmeal might get monotonous day after day. That’s why once in a while, it’s fun to shake (or bake) things up a bit and enjoy oats in a different form.
These individual baked oatmeal cakes are great to grab when you’re in an a.m. time crunch, and they are simply so darn cute. Combine the super power of cranberries, oranges and oatmeal, and you have a nutritious, not-so-boring breakfast.
How do you get yourself out of a breakfast rut?
Ingredients
1 cup Coach’s Oats®
½ cup date puree
⅓ cup freshly squeezed orange juice
½ cup fresh cranberries (if frozen thaw until soft but still cold)
½ tsp. almond extract
¼ cup sliced almonds
¼ cup plain Greek yogurt (such as Chobani®)
1 Tbsp. raw sugar
Sprinkle of cinnamon (to taste)
Instructions
- Preheat oven to 375°.
- Combine all ingredients in a large bowl and mix well. Scoop oats into muffin tin sprayed with non-stick cooking spray. Bake for 15 minutes. Makes 6 oat cakes
