In lieu of the festive baking season, we baked a delicious treat you can share with your family and loved ones that they’re sure to enjoy.

Ingredients
- 1 cup spelt flour
- ⅓ cup brown sugar
- 1 ½ tsp. baking powder
- ¼ tsp. salt
- ½ tsp. cinnamon
- ¼ tsp. nutmeg
- 1 cup Coach’s Oats®
- 1 cup chopped Hadley dates
- 1 egg
- 6 Tbsp. butter (melted)
- 1 cup fat-free milk
- ½ tsp. pure vanilla extract
Instructions
- Preheat oven to 400°.
- Combine flour, sugar, baking powder, oats, spices, salt and dates in a large mixing bowl.
- In a separate bowl mix together milk, egg, butter and vanilla. Add the wet ingredients to the dry mix until all combined.
- Scoop batter into a well-greased muffin pan.
- Bake muffins for 18 – 20 minutes or until golden brown.
