
It’s no coincidence that Valentine’s Day and heart-healthy month are both in February. From expressing love to eating heart-smart foods, February is a month full of awareness for that ever precious ticker.
Here is a lightened-up cookie that is sure to share your love with your Valentines.
Ingredients
¾ cup flour
1 tsp. cinnamon
½ tsp. baking soda
¼ tsp. nutmeg
¼ tsp. salt
1 cup brown sugar
2 Tbsp. butter
3 Tbsp. puréed golden raisins*
1 ¼ tsp. almond extract
1 egg
½ cup Coach’s Oats®
*To purée raisins: soak the raisins in water for at least 90 minutes. Drain the raisins and purée in blender or food processor
Instructions
- Preheat oven to 350°
- Mix flour, cinnamon, baking soda, nutmeg and salt together in a bowl and set aside.
- In a separate bowl, cream together sugar, butter, puréed raisins, extract and egg until well combined. Slowly, add in flour mixture and oats. Mix well.
- Drop cookies on lightly greased cookie sheet about 2 inches apart (the cookies will spread). Once on the sheet, form the cookies into heart shapes using your hand (have a dramatic “V” at the top of the heart so the shape stays through baking). Bake 8 to 10 minutes or until golden. Makes about 10 heart shaped cookies.
- We sandwiched ours for Valentine’s Day with strawberry ice cream. You could use any ice cream of your choice, maybe a rum raisin; or you can top cookies with Nutella® and chopped nuts.
