We think pumpkin was made for Coach’s Oats. There are just way too many combinations – we can’t help but share them with you. We want to thank our fan, Trish, for emailing us the idea for these pumpkin cookies. The smell of cinnamon, pumpkin and nutmeg all baked together just makes a kitchen feel cozy. So cozy up your kitchen with these cookies:

Instructions
- Preheat oven to 350°.
- Stir together dry ingredients in large bowl. Add egg, milk and pumpkin to dry mixture. Drop heaping tablespoonful mounds onto lightly greased baking sheet and form into desired shape. Bake for 15 to 17 minutes or until golden and cooked through. *Makes 2 dozen cookies.
*Optional Toppings:
• Nestle Semi Sweet Morsels
Add to top of cookies right before they bake.
Or
Cinnamon Cream Cheese Frosting
• 8 oz. cream cheese, softened
• ½ cup butter, softened
• ¾ cup powdered sugar
• 1 tsp. vanilla
• 1 tsp. cinnamon
Cream together butter and cream cheese until smooth. Stir in sugar and remaining ingredients. Add to cookies once completely cooled.
