
Fresh flavors, fresh fruit and vibrant colors all connote springtime. There’s no fresher or more colorful fruit then a bright yellow lemon. Adding lemon to anything just means sunshine, springtime and fresh light flavors. So, get ready to pucker up and enjoy these spring fresh lemon squares, a perfect addition to any spring table.

Ingredients
½ cup Coach’s Oats®
1 cup flour
½ cup (1 stick) unsalted butter
¼ cup brown sugar
¼ tsp. salt
4 eggs, plus 2 egg yolks
2 cups sugar
1/3 cup flour
1 tsp. lemon zest
1 cup freshly squeezed lemon juice
Instructions
- Preheat oven to 350°.
- Cut butter into oats, 1 cup flour, brown sugar and salt. Once combined press firmly into a well greased 9 x 13 –inch baking dish. Bake for 20 minutes.
- While crust is baking, mix eggs, yolks, sugar, remaining flour. Once combined, add lemon zest and juice to eggs and sugar mixture. Pour lemon mixture over crust and reduce heat to 300°. Bake for 30 minutes.
- Let bars cool and store in refrigerator. Garnish with powdered sugar before serving.
