June is National Fresh Fruit and Vegetable month. Perfect timing, because it’s also the season when all these delicious fruits, berries and veggies are at their peak. For a treat that uses some of these scrumptious seasonal flavors, we thought of fruit crisp.
Fruit crisps are easy desserts to whip up in no time, not to mention they are forgiving on your waistline. We added flair to our crisps by baking them in jars. The jars make the crisps easy to transport, easy for entertaining and easy for portion control. You can even add fabric to dress them up even more.
Ingredients
For the Crisp:
⅓ cup butter
⅔ cup brown sugar
½ cup whole wheat flour
½ cup Coach’s Oats®
¼ cup chopped walnuts
1 tsp. cinnamon
For the Filling:
4 peaches (chopped)
3 cups mixed berries (fresh or frozen)
½ cup raw sugar
2 Tbsp. whole wheat flour
Instructions
- Preheat oven to 375°
- In a mixing bowl cut butter into all other crisp ingredients until consistency is crumbly.
- In a separate large bowl mix together peaches, berries, sugar and flour.
- Fill ½ qt. mason jars (about 10) with fruit mixture and place jars onto rimmed baking sheet. Top each jar with crisp/ nut mixture. Bake fruit crisps for about 30 minutes or until the filling is bubbly and top turns to a golden brown. Let cool. Enjoy!
