We’ll get to our Easter candy in a minute, but first an oatmeal bunny bowl.

Who doesn’t love the Reese’s® Peanut Butter Eggs? I think they’re better than the regular cups.

Chocolate Baked Oatmeal Peanut Butter Cups
- 4 cups Coach’s Oats®
- 1 Tbsp. baking powder
- 1 banana, mashed
- 2 cups unsweetened applesauce
- 2 Tbsp. honey
- 1 tsp. vanilla
- 2 eggs
- Pinch of salt
- 1 cup fat free milk (any milk of your choice)
- ¼ cup + 1 Tbsp. cocoa powder
- ⅓ cup peanut butter (we use Laura Scudders)
- 1 Tbsp. powdered sugar
Preheat oven to 350°.
In a large bowl combine eggs, vanilla, applesauce, banana, honey and cocoa powder.
Mix in oats, baking powder, salt and milk until well combined. Pour batter into lightly greased muffin tins.
In a separate bowl mix peanut butter and powdered sugar. Drop ½ tsp. scoops in the middle of each cup. Bake 18 to 20 minutes until oatmeal has set.
No bunny does oatmeal like Coach’s Oats!

“Cadbury” Coconut Crème Oatmeal
- ¼ cup Coach’s Oats®
- ¾ cup fat free milk (any milk of your choice)
- 2 tsp. cocoa powder
- Drizzle of honey
- Coconut butter, melted
- Fat free caramel topping
Bring milk to boil in a small saucepan. Reduce heat and add cocoa powder, oats and honey (to your desired sweetness). Cook for 3 to 5 minutes. Top with melted coconut butter and honey.
