We like to mix things up a bit. Why utilize a pancake mix for solely one item? The mix comes perfectly equipped to handle other baking assignments. It’s a delicious blend of multigrain flour with eight whole grains and fiber-packed flaxseed. So, the mission: Pancake mix to cookies. Accepted!
(Note: You can customize, personalize or emphasize any topping or flavor of your choice.)
Coach’s Oats Multigrain Mix Cookies
- 2 ¾ cups Coach’s Oats® Multigrain Pancake Mix
- ¾ cup brown sugar
- ½ cup butter, softened
- 2 eggs
- 2 tsp. vanilla
For Blueberry Pecan Cookies add:
- ½ cup blueberries
- ½ cup chopped pecans
For Dark Chocolate Chip Cookies add:
- ½ cup dark chocolate chips
Preheat oven to 375°
In large bowl cream together butter, sugar, eggs and vanilla. Stir in pancake mix until evenly combined (dough will be a little tough). Fold in chocolate chips (or other add-ins).
Drop Tablespoon-sized balls of dough about one inch apart on lightly greased cookie sheet.
Bake 10 to 12 minutes or until lightly brown (when an outer corner is golden brown, they will be done). Cool on wire rack and enjoy.
