I am a big fan of Hungry Girl and love her daily emails and recipe tips. Last weekend, I took a trip to one of her book signings and had the pleasure to meet Hungry Girl, aka Lisa Lillien, herself. In honor of Hungry Girl, this hungry girl made Oatmeal Raisin Softies and used Coach’s Oats (of course) as the chosen oatmeal. Recipe below:

Ingredients
- ¼ cup brown sugar (not packed)
- 2 Tbsp. Splenda (granulated)
- 2 Tbsp. light whipped butter or light buttery spread, room temperature
- 2 Tbsp. no-sugar added applesauce
- 2 Tbsp. fat-free liquid egg substitute
- ¼ tsp. vanilla extract
- ⅓ cup whole-wheat flour
- ¼ tsp. baking soda
- ¼ tsp. cinnamon
- Dash of salt
- ¾ cup old-fashioned oats
- ¼ cup raisins (not packed), chopped
Instructions
- Preheat oven to 350°.
- In a bowl, combine brown sugar, Splenda, butter, applesauce, egg substitute, and vanilla extract, and mix thoroughly with wire whisk.
- Add flour, baking soda, cinnamon, and salt, and stir until completely mixed and smooth.
- Add oats and raisins, and mix until both are thoroughly coated with batter.
- Line a large baking sheet with parchment paper. Spoon batter onto sheet in 6 evenly spaced mounds.
- Place baking sheet in the oven and bake for about 10 minutes or until a toothpick inserted into a cookie comes out clean.
- You won’t be hungry after this treat! *Makes six servings.
