The warm, cozy aroma of cinnamon, maple syrup and apples are oat-so comforting. After all, “There’s nothing more American than apple pie.” A summer staple filled with flavors of fall and winter is the perfect way to celebrate a Christmas in July. A cozy bowl of oatmeal topped with comforting apple pie, we’re in!
Since we’re celebrating in summer and don’t want to heat up our kitchens, this Apple Pie Compote is the ticket.
Top the oats with compote alone for a delicious, nostalgic treat. Or, if you are like Coach, “Apple pie without, cheese is a like a hug without the squeeze.”
Weather too warm? Want emphasize the JULY part in the celebration? Top with a scoop of vanilla ice cream. We used Halo Top, with the added protein for a less-guilty indulgence.
Celebrate however you wish, or tuck this recipe away for cooler weather.
Ingredients
- 1 cup Coach’s Oats®
- 3 cups water
- 1 large apple, diced
- 1 tsp cinnamon
- ⅛ tsp ginger
- ⅛ tsp clove
- ⅛ tsp nutmeg
- pinch of salt
- 1 ½ Tbsp. butter, browned
- 1 – 2 Tbsp. pure maple syrup
Instructions
- Cook oatmeal on stove, per directions. Set aside.
- In a skillet on medium heat, melt butter and cook until browned. Add apple, spices and maple syrup. Sauté for 3 minutes. Reduce heat and cook 2 to 5 minutes or until thickened.
- Top oatmeal with compote and garnish with cheese, ice cream, whipped cream, etc.
