Summer, sunshine, swimming and no school- all these wonderful things wrapped into one season. With the weather heating up, the last thing you want to do is heat up the kitchen. We have been experimenting with no-bake treats, so the first success comes as no surprise.
The combination of chocolate, peanut butter and oatmeal never fails. This recipe is perfect for anyone; even kids and dads can’t mess this up.

Ingredients
1 cup Coach’s Oats®
1 cup coconut (sweetened or unsweetened; your preference)
¼ cup ground flax seed
¼ cup wheat germ
½ cup dark chocolate chips or pieces
⅓ cup pure maple syrup
1 tsp. vanilla
½ cup all natural peanut butter
Instructions
- Combine all ingredients in a large bowl. Roll dough into desired sizes (we did about 1” balls). Place on baking sheet lined with wax paper and chill in refrigerator for at least an hour or until firm. Enjoy!

Can you replace the maple syrup with something else? We don't care for maple flavor.
Jane, you sure can! Honey would probably work great.
Can you replace the peanut butter with almond butter?
I'm sure almond butter would be delicious. There are so many nut butters these days that would probably go great with these bites.
