
Say goodbye to breakfast bars. These individual cereal cups are easy to make, easy to eat and perfect on-the-go. Packed with fiber, they are lightly sweetened and have just enough of an indulgence from the chocolate chips to make them a treat.
Ingredients
- 4 cups Coach’s Oats®
- 1 Tbsp. baking powder
- 1 mashed banana
- 2 cups unsweetened applesauce
- 1 Tbsp. honey
- 1 tsp. vanilla extract
- 2 eggs
- 1 ½ cups milk (cow, rice, soy etc.)
- ½ cup dark chocolate chips (plus more for topping)
Instructions
- Preheat oven to 350°.
- In a large bowl combine eggs, vanilla, applesauce, banana and honey. Once combined, mix in oats, baking powder and chocolate chips. Add milk to the mixture. Pour batter into well-greased muffin tins. Top each cup with a few chocolate chips and bake for 25 minutes or until golden and cereal has set.

I'm allergic to bananas; do you think it would be ok doing recipe as is minus bananas, or should I substitute additional apple sauce? Thanks!
M, I think it should be fine with more applesauce. Maybe you could even try using a little yogurt? Let us know what works best for you 🙂

Does this use 4 cups cooked or uncooked oatmeal? I used uncooked but it was a bit hard and dry.
Sky, Thank you for stopping by. Yes the oats are not cooked before. The recipe is a baked oatmeal and tends to be drier than a muffin texture. To add more moisture, you can add an extra mashed banana and possibly try cooking for 18 – 20 minutes. Thanks for being a fan!
