Say goodbye to breakfast bars. These individual cereal cups are easy to make, easy to eat and perfect on-the-go. Packed with fiber, they are lightly sweetened and have just enough of an indulgence from the chocolate chips to make them a treat.
Chocolate Oatmeal Cereal Cups
4 cups Coach’s Oats®
1 Tbsp. baking powder
1 mashed banana
2 cups unsweetened applesauce
1 Tbsp. honey
1 tsp. vanilla extract
1 ½ cups milk (cow, rice, soy etc.)
½ cup dark chocolate chips (plus more for topping)
Preheat oven to 350°.
In a large bowl combine eggs, vanilla, applesauce, banana and honey. Once combined, mix in oats, baking powder and chocolate chips. Add milk to the mixture. Pour batter into well-greased muffin tins. Top each cup with a few chocolate chips and bake for 25 minutes or until golden and cereal has set.
