Whether it’s April showers or May flowers, we can’t wait for spring. Fresh flavors, bright colors and sunshine are always reasons to smile at Coach’s Oats.
Another reason to smile: these yummy Blueberry Oatmeal Bars. Although, this recipe includes a few more steps, it’s well worth the work.
Ingredients
- Crust and Crumble
- 2 cups Coach’s Oats
- 1 cup almond meal
- 1 cup whole wheat flour
- ½ cup coconut oil (not melted)
- ½ cup honey
- 1 tsp. vanilla
- ½ tsp. baking powder
- ½ tsp. cinnamon
- ½ tsp. salt
- 2 Tbsp. almond milk
- Blueberry filling
- 3 cups blueberries
- 2 Tbsp. honey
- juice of 1 lemon
- 1 tsp. vanilla
- pinch of salt
- 2 Tbsp. of corn starch, mixed with 2 Tbsp. of water
Instructions
- Preheat oven to 350°
- In a large bowl combine oats, almond meal, flour, baking powder, cinnamon and salt. Whisk to combine. Mix honey, vanilla and almond milk together in a bowl. Pour honey mixture and add coconut oil to oats. Mix well until liquid has been well incorporated. Press 2/3 of mixture into a well-greased 13x9” pan. Bake for 15 minutes.
- While crust bakes, prepare filling. In a saucepan, combine filling ingredients over medium heat. Allow blueberries to release all their juices and the mixture to thicken about 10 – 15 minutes. Remove from heat and let cool a few minutes.
- Pour blueberry mixture over crust. Sprinkle remaining oat mixture on top. Bake for an additional 20 minutes. Allow mixture to cool completely before cutting into bars.

Hi Robin, we have not tried it with another oil. However, it may work well with an avocado oil, although we do like the slight flavor the coconut oil brings. Yes, you can replace the whole wheat flour with white, we haven’t tried it and may have a softer texture.
