Berry season is upon us. It’s time to use up those tasty jewels and take advantage of their healthful benefits and flavors. Aside from using them to top a bowl of oatmeal, they also make a great addition to a muffin. The easy, ready-to-go characteristic of a muffin is another way to fuel the body with the goodness of whole grains and the yumminess of berries.

Ingredients
- 2 cups Coach’s Oats® (run in a food processor for a few minutes to break apart larger pieces)
- 1 ¼ cup fat-free milk
- ½ cup brown sugar
- ¼ cup canola oil
- 1 egg, beaten
- 1 tsp. vanilla
- 1 ¼ cup white whole wheat flour
- 1 Tbsp. baking powder
- ¼ tsp. salt
- 1 cup fresh or frozen mixed berries
Instructions
- Preheat oven to 350°.
- Combine oats, milk, sugar, oil, egg and vanilla in a large bowl and beat well. In a separate bowl mix together flour, baking powder and salt. Add in oat mixture with dry ingredients until all combined. Fold in berries. Pour batter into lined muffin tins (lightly sprayed with non-stick spray) and bake for 20 minutes or until a toothpick inserted into the center comes out clean.
