
We’ve said it before and we’ll keep on saying it: “Breakfast is the most important meal of the day.” Breakfast can help with staying focused, fueling your day, helping maintain a healthy weight and even jump-starting your metabolism. Yet, we know that for many it can be hard to eat a balanced meal in the hectic morning hours.
Coach’s Oats® will continue to give tips for easy breakfast ideas. One is to prepare the night before. Meals such as Overnight Oats and our Baked Blueberry Oatmeal Pudding are delicious choices. Another option is baked oatmeal. Bake this recipe on a Sunday night and have a wholesome whole grain breakfast ready all week. Adjust the flavors and sweeteners to your preference or keep it simple and just top with fresh berries and milk.
Ingredients
- 1 ¾ cups Coach’s Oats®
- ½ tsp. baking powder
- ¼ tsp. baking soda
- 1 tsp. cinnamon
- ¼ tsp. salt
- 1 ½ cup fat-free milk
- 8 oz. fat-free yogurt (we used plain Chobani®)
- 3 Tbs. egg white substitute (or 1 large egg)
- ¼ cup brown sugar
Instructions
- Preheat oven to 350°.
- In a large bowl combine the first five ingredients. In a separate bowl, whisk together milk, yogurt, egg and brown sugar. Add the wet ingredients to the dry and mix well.
- Pour oat mixture in an 8 x 11.5 inch lightly greased baking dish. Cover dish with foil and bake for 20 minutes. Remove the foil and continue to bake for another 10 minutes.
- Serve the mixture warm and top with fresh berries and a splash of milk. Refrigerate the oats and keep on hand for breakfast all week.
