
Fall is the perfect season for apples. There is sure to be an abundance of them at your local markets or you can even pick your own fresh fruits. This recipe is quick, simple and a great make-ahead meal for the week. You’re welcome to use the variety of apple that you love; we used Gala. What apple recipes are you most excited about making?
Ingredients
1 ¾ cups Coach’s Oats®
½ tsp. baking powder
¼ tsp. baking soda
1 ½ tsp. cinnamon
¼ tsp. salt
1 ½ cups fat-free milk
6 oz. fat-free plain Greek yogurt
1 large egg
⅓ cup brown sugar, plus more for sprinkling
1 medium apple, chopped
1 cup cheddar cheese, grated
Instructions
- Preheat oven to 350°.
- Combine first five ingredients in a large bowl and whisk together.
- In a separate bowl mix together milk, yogurt, egg and brown sugar until well combined.
- Add wet ingredients to oat mixture and mix. Fold in apples and ¾ cup cheese. Pour mixture into a greased 9-inch baking dish. Bake for 20 minutes covered with foil. Remove oatmeal and sprinkle with brown sugar and top with remaining cheese. Bake for an additional 10 minutes. For the nice golden crisp top, put the oatmeal under the broiler for a few minutes or until golden brown.
