It’s officially apple season. Have you gone apple picking yet? Well, grab those fresh fruits and get your recipes ready. This cake is full of Coach’s Oats, fall flavors and will leave your kitchen smelling like a crisp autumn dream.
Ingredients
1 cup Coach’s Oats®
1 cup hot water
1 ½ cups all-purpose flour
2 tsp. ground cinnamon
1 tsp. baking soda
½ tsp. salt
1 ⅓ cups packed light brown sugar
1 cup apple butter
2 large eggs
Frosting:
¼ cup butter
⅓ cup packed light brown sugar
¼ cup pure maple syrup
½ cup chopped pecans, toasted
Instructions
- Preheat oven to 350°.
- Combine oats and hot water in a small bowl; set aside.Combine flour, cinnamon, baking soda, and salt in a large bowl. In a separate bowl combine sugar, apple butter, and eggs; beat with a mixer on high speed for 1 minute.
- Add oat mixture to sugar; beat at low speed until well blended. Add half of flour mixture to sugar mixture; beat well. Add remaining flour mixture; beat well. Spoon batter into 11 x 7–inch lightly greased baking dish. Bake for 48 minutes or until a wooden pick inserted in center comes out clean. Remove cake from pan and cool on a wire rack.
- To prepare frosting, melt butter in a small heavy saucepan over medium heat. Add sugar and maple syrup; cook 2 minutes or until bubbly, stirring constantly. Stir in pecans. Quickly pour frosting over cake; spread evenly using a rubber spatula.
