Oatmeal Cookies

INGREDIENTS

¾ cup butter
1 cup packed brown sugar
½ cup sugar
1 tsp. baking powder
¼ tsp. baking soda
1 ¾ cup all-purpose flour
¼ tsp. salt
2 eggs
2 tsp. vanilla
2 tsp. ground cinnamon
2 cups Coach’s Oats®
1 cup raisins*

PREPARATION

In a mixing bowl, beat butter with electric mixer for 30 seconds. Add sugars, salt, baking powder, baking soda, eggs, vanilla, cinnamon and about half the flour. Beat until thoroughly combined. Beat in remaining flour. Stir in oats and raisins*. Drop by rounded teaspoons on an ungreased cookie sheet about 1 inch apart. Bake at 375º for 12-15 minutes or until edges are golden. Cool cookies on a wire rack. Enjoy!

*Optional: Options - replace raisins with dried cranberries or chocolate or butterscotch chips. You can also add ½ cup chopped walnuts or pecans.

For a softer cookie use 1 cup Coach’s Oats and 1 cup rolled oats.
